Peach, Burrata & Rocket Salad with Hazelnut Oil

This salad is built for the short stretch of summer when peaches are fragrant and juicy. Creamy burrata softens the peppery rocket, while toasted hazelnuts add crunch.

Ingredients

  • 3 ripe peaches or nectarines
  • 1 burrata, about 150g
  • 80g rocket
  • 40g hazelnuts
  • 2½ tbsp cold pressed hazelnut oil
  • 1 tbsp fresh lemon juice
  • 1 tsp runny honey
  • A small pinch of sea salt
  • Freshly ground black pepper
  • A few fresh basil leaves, optional

Method

  1. Toast the hazelnuts in a dry frying pan over medium heat for 3–5 minutes, shaking often. Cool slightly, then roughly chop.
  2. Whisk the hazelnut oil, lemon juice, honey, salt and black pepper in a small bowl.
  3. Slice the peaches into wedges and arrange them with the rocket on a wide serving plate.
  4. Place the burrata in the centre and gently open it with a spoon. Drizzle over the dressing, scatter with toasted hazelnuts and finish with basil if using.
